After three years of waiting, the Gaggan experience is finally coming to the One & Only Royal Mirage this weekend!
He may be known for creating bizarre and extraordinary dishes in his award-winning Bangkok restaurant, Gaggan, but the two-time winner of Asia’s 50 Best Restaurants in the world revealed his favourite way to chill out is comparatively low-key. He loves tucking into his go-to comfort food of instant noodles and crab curry.
Gaggan revealed that diners at the pop-up at Celebrities will be treated to 18 main courses, 16 of which can be eaten without any cutlery – so kiss goodbye to those knives and forks!
Describing the process of selecting his menu for the upcoming pop-up restaurant, the Indian chef – who appeared on the second series of Netflix’s Chef’s Table – likened the experience to going to a concert. “You want to listen to the new songs, but you always want to listen to the greatest hits”, which leaves us pretty certain that lucky diners will get to tuck into a few of his signature dishes.
With menu cards at Gaggan’s pop-up made up entirely of emoji symbols to depict the food, Anand explained that his personal favourite emoticon is the ‘hug’, revealing the uniform in his kitchen this weekend is a shirt which states, “Hug me, I smell like curry!”
The culinary genius believes that to cook something delicious, you need to have the fantasy for it, and has a food philosophy of, “If you can’t convince, confuse.”
But what foodies look forward to at this very special dining experience? “The path I chose, it cannot be one recipe. It is about thinking that an Indian’s food could be a bite” Gaggan told Cosmo. “Whatever we do, it’s about that one bite that has a seduction of India, and still be Gaggan.”
