It’s that overwhelming time of year where everyone is either scrambling to meet deadlines or just scrambling for a few days’ rest.
In the year’s I don’t get to spend Christmas as home, I really like to squirrel away with my PJs, a few good books and decadent cups (yes, plural – don’t judge me!) of hot chocolate.

The recipe is really easy!

INGREDIENTS
1/4 teaspoon vanilla extract
2 to 3 teaspoons Cocoa powder (I like Cadbury’s)
2 teaspoons sugar (or add to taste)
1 cup milk
1 pinch salt

DIRECTIONS
Mix your sugar, cocoa powder and salt in large mug.
Heat milk over the stove until hot, but not boiling. If a skin starts to form, you’ve gone too far. You can microwave it, I just find using the stove makes it takes better.
Slowly pour the hot milk into the mug, stirring until the cocoa is well blended.
Stir in vanilla.

VARIATIONS:
Extra chocolatey:
Increase cocoa powder; follow recipe above.
Slightly less sinful: Use non-fat milk; follow recipe above.
Sugar Free: Leave out the sugar. Combine cocoa and salt. Proceed as above, using non-fat milk. Stir in vanilla and sugar substitute to taste.
